Due to my early harvest, when the olives are not yet fully ripe, I have a slight bitterness and a sharp finish. My robust and fresh flavor makes me an excellent match for fresh vegetables, pasta, fish, or even cold dishes. I am a blend of the special olive varieties Taggiasca, Biancolilla, Coratina, and Peranzana.
