My particularly intense flavor comes from the blend with an excellent, heirloom pear variety that grows near Heidelberg. The crowning touch is a subtle hint of lavender. To ensure my lavender flavor isn't too overpowering, the lavender was naturally removed through gentle filtration after maceration.

I'm a very special kind of drinking vinegar, as I don't use any added honey, sugar, or colorings. My base is the distinctive "Woody" drinking vinegar. However, the broad, aromatic, woody flavor of "Woody" is no longer prominent. My maceration with cocoa beans and then with tonka beans creates a completely different and fascinating flavor.
The raw cocoa beans are a wonderful counterpart to the intense tonka bean. This blend gives me a gentle, earthy note, while the tonka bean contributes its unmistakable, unique flavor. Gentle processing and storage under optimal conditions allow my flavor to truly shine.

I'm an even more unusual drinking vinegar than my base, "The Fig," because I belong to the XW series. The XW stands for Extra Wood. After the first filtration, I was aged in a cherry wood barrel (new, of course) and am the sister of the Fig from the acacia wood barrel. New barrels – because the flavor characteristics of the wood should clearly come through. Basically, my acidity becomes milder and rounder with age, and the cherry wood brings out my fruity aspects more. Some people even taste a hint of cherry when they taste me neat. Are you one of them?
I am double filtered and only bottled after another rest period.

After harvesting, my quinces are allowed to continue ripening, developing a very beautiful, rounded flavor. My figs come from a village at the foot of the Alps. These figs grow only here, and they arrive in Germany fully ripe. The combination of freshness and ripeness gives my flavor an incomparable touch.
My balanced and harmonious flavor makes me extremely versatile. I go very well with salmon, grilled goat cheese, or—in combination with the "Amalfi Lemon Olive Oil"—excellent with tomato and mozzarella. Incidentally, I also have a brother and a sister. They were specially aged in different wooden barrels.
